Cranberry Date Bars

  • 1 12oz pkg whole cranberries

  • 1 8oz oz chopped pitted dates

  • 1tsp vanilla

  • 2C flour (Spelt flour would work nicely)

  • 2C rolled oats

  • 1 1/2C packed brown sugar

  • 1/2 tsp baking soda

  • 1/4 tsp salt

  • 1C butter, melted

In medium saucepan, combine dates and cranberries. Cook, covered, over low heat for 10-15min (til cranberries “pop”)stirring frequently. Stir in vanilla. Set aside.

In large bowl, stir flour, oats, sugar, baking soda, and salt.

Stir in butter til well blended.

Pat half of oat mixture on bottom of 13X9X2 baking pan.

Bake 350 for 8min

Carefully spread cranberry filling on top of baked oat mixture.

Top with remaining unbaked oat mixture and pat gently.

Bake 20-22min more til golden brown

Cool and drizzle with orange glaze then cut in bars
